Will we be able to look farther back in the activities?

Yes, this is a planned feature for the Recent Activity page alongside the ability to filter by activity type. I'm currently focusing on IRL stuff at the moment but once I'm less busy I'll be able to add more functionality to that page. For now, you can always visit Special:RecentChanges to see any further-back edits.
